Mustard-Sage Vinaigrette

I’ve never been a fan of store bought salad dressings. Most of them contain artificial sweeteners and MSG to make them taste better plus a lot of them are made up of of mostly water. But if you are a big ranch dressing or thousand island fan and just starting the paleo challenge, you may be freaking out a bit.

I have a couple favorite salad dressings but here’s the first:

Mustard-Sage Vinaigrette — makes about 1/2 cup:

What you’ll need:

  • blender (of course I used my hand blender =) )
  • 1 small shallot, chopped
  • 2 cloves garlic, chopped
  • 1 tbl red wine vinegar
  • 2 tbl fresh lemon juice
  • 1 tbl whole grain mustard
  • 6 leaves fresh sage, chopped
  • 1 tsp salt (or to taste)
  • 1 tsp black pepper
  • 1/3 cup extra virgin olive oil

One. Caramelize shallots and garlic in a pan and let cool (heat 1-2 tbl of olive oil on medium heat until they are translucent and start to turn brown. Don’t burn.) This adds a really nice sweetness to the dressing which replaces the honey/sugar you see in a lot of recipes.


Two. Combine all ingredients for blending, adding the olive oil last.



Three. Blend, then taste for seasoning. If you prefer sweeter dressings, use less lemon juice or try using fresh orange juice instead of lemon.

Four. Enjoy! This dressing goes really well on salads and meats. Add sliced raw almonds for a delicious nutty twist.
